I've enabled the DomainKeys-Signature in my server.

Now I want to enable DKIM, how?

There is no DKIM automation in Plesk 11.
In order to use DKIM you should:
1) manually add proper TXT records in mail domain
2) enable DKIM in your mail server software

- concerning TXT record sytax

- enabling DKIM for mail server sofrware (for me = ubuntu qmail)?

(I.E. are there plesk tutos on this topic or I've gotta go hunting on google ?)

The complex part of this record - it contains public key that used by other parties to verify origin of a email, sent from this domain.

Current Plesk Qmail component does not support DKIM, only DomainKeys (previous edition of DNS domain to an email sender verification)
Thus, right now there is no support of DKIM in Plesk 11.0 and Plesk 11.5

There is Qmail patch that enables DKIM: http://notes.sagredo.eu/node/92
However it is not supported by Plesk. Thus, you will need to build and install Qmail manually and then use it without management from Plesk control panel.

with mail server as postfix 2.8.14-13040119

How to enable DKIM-signature for outgoing email?

Please Provide some solution to this even if you have NOT implemented in your Plesk 11.5.
as our users emails are bouncing back due to this and we have to migrate them from plesk to
cpanel based server.

You can use mentioned Qmail patch and KB article http://kb.parallels.com/1161 for implementing DKIM on your Plesk server.
