I want to update my website to the latest wordpress version but before that I want to make sure if I back up the website using WP Toolkit , update the website and something happens ( for example it crashes ) will restoring that website also restore to the previous wordpress version ?
to explain it more : let's say my website is on wordpress version 6.1.0 and I back it up then update it to 6.2.0 but it crashes and stops working , will restoring from the backup also restore to version 6.1.0 ?

Yes, if you back up your website using WP Toolkit and after that change the website (for instance, apply an update), restoration of this backup will revert all changes, including website files, its database, and so on.
