I know it isnt a good idea, but its fast. Does anyone know how to setup a root account for FTP whereby i would be able to access ALL files on my server?

I personnally use the "File Server" module from plesk which is samba... and I use the VPN Module and the firewall module

firewall -> allow smb connections only from vpn addresses

Just don't do that. I'd go with using scp. Check out WinSCP if you're running Windows, Fugu if you're running OS X or gFTP on Linux. Or just the scp command in a terminal.
