Is it possible to change the home directory for a user so that when they login, they get put in the httpdocs level where all the files for the site are?

Yes it is possible. But it's not possible through Plesk itself. You need to do the change though a shell and manually change the settings in /etc/passwd as dictated by your OS.

Not unless you change the settings of the user from Control Panel. Then there might be a rewrite.
