Issue Problem with excessive PHP opcache file caching

I only use PHP FPM 8.2.17 for all websites. The Opcache settings are the default settings. The server has been running for years and there have never been any problems comparable to the ones I am experiencing now.

There were repeated fatal errors in some Wordpress instances after upgrading a plugin, the problem was that some variables were recognized that actually no longer existed in the plugin. The solution was always to restart PHP FPM. Settings in config files like functions.php or wp-config.php are not applied, only after a restart of PHP FPM, etc.

I couldn't find anything helpful on Google.
Opcache has been around for a long time, but these problems are new.
Does anyone have any idea how to get Opcache to check files for changes again? Or is this just a glitch in this PHP version?
