How to setup Working directory on a local server ?

How do I setup the Working directory on a local server ? I am running Sitebuilder on the same server that I plan to host the other sites.

The path to the Sitebuilder application on the server is:

C:inetpub\wwwroot\sitebuilder\

I am usin Xcopy as the Publication mode

Please advise. Thanks.
 
There are two possible scenarios:
1. One share per site
For each site create a file share pointing to the website root; in this case working dir=sharename
2. One share for the all sites
Create a one share pointing to the root directory under which you will create site roots in IIS
in this case working dir=sharename\site root dir

This scenario assumes you create a host for the local web server; tip: use machine name or machine IP as host ip, don't use loopback addresses lke 127.0.0.1 or localhost
