I completely agree, I always love being one of the first to try out the latest things, even on a test server.
WooCommerce yes, sometimes it takes a long time until the updates are available. But WooCommerce is getting better and better with great integrations from Google SiteKit to Facebook...
PHP 8.x really feels faster. The Plesk Optimizer is really also a nice thing for web servers / SQL / PHP.
So I recommend an "Advance Mode" in the installer where you can see the "Experimental Packages", so parts of the Plesk community would be live beta testers ;-)

I got a dependency error with libodbc2.so

i solved the Problem runing and deleting all plesk packages @ apt-get dist-upgrade, but after this step and rebooting i run in the next error.

i hang after reboot at step 17. plesk installer update...

Before step 20. plesk installer update...
i've the same problem.
there are a lot of files in vhost-directory and i had run plesk repair all -y.
Is it possible that this is running in background and slows down the webserver a lot.

the error is receive on the source server is:
"Failed to fetch configuration data from Plesk servers
Cause: Command execution failed on the source server 'source' (xxx.xxx.xxx.xxx) with non-zero exit code."
it would be nice if you could setup on the source server the "tmp" directory.
it's true you need both mariadb / mysql admin user in plesk.
admin@localhost
AND
[email protected]
got the plesk migration one step forward. this problem is solved.
Only one admin mysql user exists per default.
