I fixed the issue myself.
Do the following:
apt-get install sed
and then:
ln -sf /bin/sed /usr/bin/sed
Retry the install with the command I posted above.

I tried to install SSH2 on Debian 11 with the following command:
plesk bin php_handler --extension-install ssh2 -id plesk-php81-fpm
but I got the following error:
