How do I configure Qmail to route all messages out via authenticated SMTP smart host?

I want to configure my existing install to use a different host that requires authentication. How do you configure it?

Do you want to use external mail relay for sending mails? If so, you might be interested in MSMTP Plesk component.

If you'll be switching to MSMTP from another mail server (QMail or Postfix), then you might want to wait till next Panel update, since currently there is a small issue with switching mail alternatives (i.e., your sendmail might get broken). However, clean installation works fine.

That's perfect --- only bad thing for me is that my Plesk is at 11.0x and can't seem to get it to upgrade to 11.5 yet.

That sounds like what I need -- however, my version is at 11.0x and doesn't seem to have an option to upgrade to 11.5 yet ....

That's because Plesk 11.5 is in early adopters release tier yet. You may want to switch to it to be able to upgrade.
