Yum updated to CentOS 4.4 & upgrading to Plesk 8.1 questions

I have been fooling around on my development server to try and learn more about linux/centos/plesk and may have run into a problem!
I recently ran "yum update" and updated everything on the box, which I thought was great, until I had to reboot. (didn't realize I needed to reboot after I ran that a few weeks ago).
So I just rebooted and came up with this error about "Kernel Panic - error syncing" (don't remember the entire thing). So rebooted, and when the boot screen loaded up, I hit a key and was given an option to select from 2 copies of CentOS to boot from. So, I selected the other one and everything booted fine.
It is at that point I noticed that I was now running CentOS 4.4 Final (instead of CentOS 4.2 Final).
So, I made a backup of /boot, and removed the entries and files that were related to the other copy that was giving me the errors.
I rebooted and everything *seems* to be fine.
This brings me to a couple of questions I hope some of you may be able to help me with:
1. What happened here? Why did I get 2 choices at boot after this update? And why did the first (new) one come up with that error?
2. Will there be an issue with upgrading this box to Plesk 8.1 now? (I already tried with the auto installer, but am getting a "No keypackages in product plesk" error, still trying to figure that out)
3. Is it possible to bump down to 4.3 if I need to?
