    Thank you Peter, making sure that there was only one set of SSL cipher settings across Apache and Nginx, then restarting all the services sorted the issue.

    Resolved Unable to Change PHP Version

    This was due to the fact the the SSL cipher settings in Nginx were corrupted, which meant that the Apache conf wasn't being rebuilt.

    Thanks for your reply, the result of that command is: nginx: the configuration file /etc/nginx/nginx.conf syntax is ok nginx: configuration file /etc/nginx/nginx.conf test is successful
