In the end I deleted the subdomain in PLESK and recreated it. Since the document root is under the main domain's .local directory all Settings of Foundry remained and I hadn't to restore them from a backup.

The line is send via eMail, when the cron job executes and the line is called and not found. Fo me, the line is send each day at 1:25am So, it seems there is a flaw in the deinstallation of immunify360 that needs fixing.

You are using config.inc.php and custom.inc.php? Is that a documented approach?

As far as I read it, one should not change defaults.inc.php, so an update wouldn't delete all changes made. But it seems, this is the only viable option. Is there a way to make changes per webpage ? So. webmail.domain1.net has different customisation than webmail.domain2.net ?

Has Plesk modiefied Roundcube in any way, so that config.inc.php isn't loaded? Also, if I have multiple domains and I want to customise them in a different way, shouldn't there be domain-specific config.inc.php files in different folders ?

I tried it just now, and the changes in config.inc.php didn't make in into roundcube... Any ideas ?
