As for me, grey is "stopped/not running/unavailable", "X" is - "disabled/unavailable/broken".

Yes, or something like that. For me it's "wildcard on - go confirm manually every 3 months, wildcard off - fully automatic". Always checked "wildcard" and had no idea it makes so much difference.

I have an installation with multiple websites. I have some issues with Apache and try to debug it.
I want to see all-sites Apache logs in Plesk panel but I find no such item on the global settings page. As far as I understand I can only go to some site's panel and see the Webserver logs...

Same problem here... Trying to remove 7.* PHP versions from the installation and get a warning that both Roundcube and Horde depend on these older versions.
I wish there were a warning when the wildcard checkbox is checked, saying "think twice because you will have to renew the certificate manually". I actually thought I will have to do it manually anyway. It's good to know I could uncheck it and make it easier but I wish I discovered it not here...
That is not true. Uner /modules/site-import/index.php/mail-migration/index?dom_id=1&site_id=1 there is a dialog for mail import, and that is a part of the Site Import.
