Like i said I'm no expert in this.. I think .. There is no down time. while the Panel will update and websites will run as normal (maybe little slower). You might have to restart the server once. I myself have a servers running 11.0.9, 10, I get this message to update too but never did it...

Stop ngnix(i think you can easily do it via the plesk panel) and see if the site works.. this is 502 Bad Gateway not 504 timeout

Yes.. lets say name like .. timeout.conf and put that line in there.. restart ngnix

You have to create a new file inside that folder..

Are you trying to increase 504 Gateway timeout time? Create a new file /etc/nginx/conf.d/ with extention .conf and add that line..srry on mobile.. hard to copy paste proxy_read_timeout 600; and restart nginx
