I managed to resolve the problem by following the steps on the following Plesk support page: MySQL error in Plesk for Linux: Column count of mysql.user is wrong. Please use mysql_upgrade to fix this error

Plesk also won't let me Export or Import a database dump, it just says "1 task in process" and then it disappears without doing anything, so there is definitely something going on.

If possible, you could download a backup and the crontab should be located in "/var/spool/cron/crontabs/" Hope that helps!
