do you know of anyway only a database or the specific files could be stored from plesk's default backup utility..

You could restore to another server, or delete the database you want restoring from the domain on the server, rename the domain to something else, then restore the dump for the ONE DOMAIN ONLY, dump the database, delete the domain, and restore to the original domain.
