Since Plesk 7.5.3 is so versatile, how do I know which services I can safely disable with chkconfig to help secure it without causing problems.

I can't find a comprehensive list specific to 7.5.3.

You won't find this, because it's Unix not Plesk related. Make sure that all the demons needed by Plesk (an mentioned in /etc/init.d/psa) can work without any problem. Then you must have enabled the required system level services.
