From what I had read before I was under the impression that Plesk did not have a utility to back up everything at once.. it had to be done domain by domain. Today I was reading the 7.5.4 changelog and came across this:

[+] 31. You can specify which domains to skip during backup



So.. if there's a place to skip them.. there must be a place to add them.

Is there a full backup utility?
 
Plesk has it's "Backup Utilities" which are available for download at their site. Once of the common complaints has always been that it was 'all' and no way to specify certain domains to exclude. So now it's 'all except which ones you want excluded'.
 
Whoops, sorry. It appears that they began downloading the backup utils with the updater module. Look for a directory like '~/psa/PSA_7.5.4/YourOSVersion/opt/bu' or search for an rpm file beginning with 'psa-bu-7.5.4'
