On Plesk for Linux mod_status is disabled on upgrades to improve Apache security. This is a one-time operation that occurs during an upgrade. You can manually enable mod_status later if needed.

For one of the hosted domains, I only administer emails. So I disabled the hosting to only manage emails but I cannot create the ssl certificate for the webmail.mydomain.com subdomain. Do you have an idea ?
I don't think you can use Let's Encrypt to do SSL for a subdomain without also hosting the root domain as well. I have a few like you mentioned too, and I just have blank, 1-page websites at the root level so that Let's Encrypt can query the root domain when it needs to verify the SSL info correctly.
