Hi again ...
still, I am configuring for first time my VPS.
I tell you :

when I access to phpMyadmin into a domain ; at the top, click in "variables" , then scrolling down to "EDIT - SQL MODE" --> I cannot EDIT it.

I have got this issue : "#1227 - Access denied; you need the SUPER privilege(s) "
But I am root at this moment.
any ideas ?
Is this possible to solve this via Plesk or SSH will be needed ?
