Massive stability problems, can anyone diagnose?

Hi, I've a feeling this may take a while to sort out!

I've had a dedicated server with plesk 8.1 installed, though I'm not 100% sure plesk is causing the problems, because it has been freezing about once every 10 days (sometimes twice a week!) for the past 5 months. My dedicated server support staff have ran a hardware stress test on the cpu and hard drives and they say all checks out fine.
