Within the Plesk settings, it shows: mod_python 3.3.1-14.el6.1

But this appears to be the actual version:
[root@web ~]# python --version
Python 2.6.6

Is there an easy way to update to run Python 3+ without having to upgrade my Plesk version?
 
mod_python is Apache module and its version is not related to the system python version.
Plesk doesn't ship python, it only downloads it from the original OS vendor repo and it is quite likely it may be outdated there (especially for older OS).
So, you can try to upgrade python on OS level with any suitable method.

Wanted to make sure I didn't do any issues with Plesk.
 
I would advise you to look for some third-party repository with python3 for your version of the operating system.
