I would like to update the software on a server (for example PHP), can I just do it through a normal process or do I need certain special packages built for Plesk?

thanks jwdick. I use freebsd, so does that mean I can use the pkg_* tools?

With FreeBSD, you use the pkg_* tools to get the updates but you will not be able to get them from Art's. At least that is my understanding of things. I do not know where you get the updates for FreeBSD. Sorry.
