What is the best way to backup before attempt to do upgrades

Hi,
I'm a novice to Plesk 7.5.4 reloaded. I'm on a virtual dedicated server running Fedora 2 and Plesk 7.5.4 reloaded.

I need to upgrade apache to a version 2.0.52 or higher, upgrade to mySQL 4.0.24 or 4.1.10a or higher, and openSSH 3.71 or higher to be compliant with Visa/MC. I could use instructions on how best to do this. And there's no Yum or Up2date on the virtual dedicated server that I could find.

I'd want to do a backup first. What is the best way to do that? Do I back up each domain in Plesk (seems tedious way to do it)? Or is there a way I can copy everything in myserver to another ftp site?

Any guidance (a link to someone's detailed instructions) is appreciated.

I was on a compliant server and when I had to move from one ISP which was closing to another, I was no longer compliant.
