Windows server goes down every week

I have a windows server that is running Plesk 7.5. It seems every weekend the web server goes down and websites are not viewable. The error appears to be that the connection is reset.

My question is, where would the log files be that might give some pertinent information regarding this?

You should find error messages in Windows Event Log.
