So, if I understand correctly, this DKIM option in "Mail Settings" is still there, if I uninstall BIND on this server? I thought you could only select it, if BIND is installed and accessible.

For DKIM. If it is not needed, how do I get the public key, which is to be added to the DNS-records? And how are the Mails signed which are sent through the Plesk server, if DKIM is switched off?

We would like to enable DKIM, but for specific domains only, but we use an external DNS Service. That is why we have enabled BIND, so that we can insert the Plesk-given DKIM signature manually.

As I already told, Spamassasin works with scoring system. Moving mails to "Spam" folder trains the Bayes database. Please check the score for this specific mail in the code view. E.g. "Spam-Status: No, score=5.5 required=7.0 tests=BAYES_xx,BAYES_xxx" If the score is too low to mark it as spam...

The SpamAssassin spam filter works with a scoring system. If the mail still gets into inbox, you should consider modifying the scores for each part. A very good tutorial on how to modify SpamAssassin for better protection can be found here (german, but maybe you can translate it with Chrome)...

T-Online blocks mostly all new/unknown mail-servers. But usually you get a quick response, if you contact them via the mentioned mail address. You should also sign up for Microsoft's SNDS Service Sign in to your Microsoft account or you maybe get blacklisted for hotmail and outlook addresses, too.
