Back up - Restore question??

I have backed up the server, and have over 100 accounts on it. I have one client that misstakenly deleted all his file.

Is there a way to extract only his files for the back up files?

Or can I restore the back up in to a file and then move the files over to his active web directorie?

I've been into trouble to get back a little file from full PSA's Dump. It's good to backup a full server, but not to extract just some files.

So, I get to the fact that I've to also do some TAR archives of my /var/www directory.
