catchall email enabled, but bounce for certain addresses?

Spammers are sending email to addresses like "admin" and "sales" on one of my catch-all-email domains. I want to keep the catch-all in place, but want to reject email to certain addresses.

I just don't see where I can do this, Am I missing something?

Just add one of those emailadrresses you want to block and alias any others you´d like to block also. Then do nothing with that box: no forwarding of mailbox options.

If you want more addresses blocked, just add them as alias.
