Is there anybody who can give me an absolutely dummy's guide to installing Courier IMAP on a Plesk 8.3 Linux server?
 
I'm not really sure what you are asking. It is one of the packages that will get automatically installed when you install Plesk. There's nothing to do other than let it get installed.

If you are doing it the very very very manual way, package by package using rpm -ivh [packagename], then you would need to include it in the list of RPMs you'd install.
