Custom httpd for subdomains

It may be simple - but haven't seen anything cept certian vhosts things for doing virtual domains. I was wondering if I can overide stuff like the open_base_dir() and put in what I like with out plesk interfering.. I'm trying to share code of a parent domain with some sub domains..
