I've done this before but I'm spinning my wheels - hoping someone can help me:

1 domain is on an exclusive IP - I'd like to navigate to that IP and see the site, but as of right now, all I see is:

This is the Pleskâ„¢ default page

If you see this page it means:

1) hosting for this domain is not configured
or
2) there's no such domain registered in Plesk.

What additional settings besides using an exclusive IP do I need to do?

hmm ... I'm guessing you'll have to edit the apache config.

then create a vhost for the IP and set the directory to the same one as for the domain running on that IP?
 
Go to the IP Addresses page in Server Management. Click on the link in the Hosting column that corresponds to that IP address and you'll see a list of domains on that IP (exclusive IPs are exclusive per client, not per domain). Select the radio button corresponding to the domain you want to be exclusive and click Set As Default.

It worked for me but from memory it was done by default, so perhaps there may be something else you need to do?
