Issue Error after changing server time

The system time on my PLESK Onyx (Centos 6) server is set an hour ahead of what it should be. As i write this, the time here in the UK is 18:30 and the server is showing 19:30 when using $date = date('Y/m/d H:i:s'); echo $date; and the server error logs are showing another time... 20:30.

When I try to change the server system time in Plesk, by moving the time backwards, all websites that use Wordpress seem to go down, Nginx reports a timeout error.

When I put the server system time back where it was, the site work perfectly fine.

Can anyone help me to understand how to get the server time correct, and what I can do to stop the sites going down when I do it.
