Question Help with mail server setup

I'm getting myself terribly confused with a new PLESK server setup (to receive a migration from an PLESK 11 server) and mail. I remember having problems the first time.

I've deployed a PLESK server using Google Cloud marketplace.
It generates a 'random' hostname.
In testing when I manually set up customers/domains etc on the new server and send emails out to the new people, they are not getting any email from the server.
Thee mail server is using the hostname, which won't (I guess) be resolving anywher in DNS.

Please can somebody walk me through the steps I need to take to fix this.
