How change IP use by mail()

Hello,

I've put new ip in Plesk 11.5 (Ok) and i've installed website on it (Ok).

When i create mail with php function mail() on the website, the smtp ip is the server ip, not the website ip.
DNS are ok.

How i can change that ?

In fact, i want domain IP outgoing address....
