How do I change the hosting type

can somebody explain to me how to change the hosting type of a domain? from physical hosting to frame?

you need to "delete" the hosting first, then you can "setup" again selecting frame forwarding

are the email-settings saved? or do i have to create the email-accounts again?

everything other than the web hosting is left untouched. You can always provision a fake domain and test it out to see what happens before "doing it live"
