Question how do you clear, delete, reset log files

I'm assuming there is a simple way to do this:

1) I'm debugging a new site
2) i want to remove all existing log files (all 6 types, etc)
3) so when I test the site... i only see new log entries?


what is the simplest, fastest way to do that?

ps. so when I turn on real time viewing... i only see new stuff
