what do i input to look up a site that a registrar hasn't quite switched over. i assume it must be something like http://xxx.xxx.xx.xx but what else is missing.

You have to set up this site default on this IP (somewhere at server->ip addresses), because Apache uses your request's hostname do select proper site to show you.
 
This was something im trying to find the answer too as well.. Suse/plesk7.5

When i go to server-ip-myip it shows the default domain fine, but doesnt allow me to change it...is there a way to change it?

Ah, "good" interface decision. server->ip addresses. Then click to the number in 'hosting' column and select the domain.
