How to set up external Mail server

SO I have a client and they want to keep there current mail servier through a company. I talked to them and they said the mx records I need to setup are the following.

mx1.companyname.com
mx2.companyname.com
mx3.companyname.com

So I looked around the forum and didn't find a start to finsh example of how to dod this.

I have saw comments about setting up MX and A records and other comments about having to delete stuff out of vhost.

SO can somebody string it all together in a step by step what needs to be done?
