Do i need to install apache, mysql, postgresql and all other things like proftpd, qmail and so on... when installing OS, or plesk will instal all this by itself?
 
Install a 'minimal' installation of Fedora (select 'custom installation', then on the package selection screen choose 'minimal'), then use the Plesk auto-installer. It will install everything it needs.
