As the title says: Is it risky to update MariaDB on Plesk 18.x "Obsidian" on Debian 10.x "Buster" (x64) manually to v10.5.x?

If I recall correctly, mariaDB 10.5 is supported on Debian 10 and as long as you're on a latest version of Plesk. Refer to https://support.plesk.com/hc/en-us/articles/12388091703703-How-to-upgrade-MariaDB-on-Plesk-for-Linux and see the part for Debian 10. Replace the version number 10.4 with 10.5.

Please note that since Debian 10 is EOL you might want to rather think about deploying a new Debian 12 or 13 server and migrate the sites to that.
