I've tried to locate some definitive documentation on Plesk 11 custom mail handlers, but failed quite miserably.

The documentation for Plesk 8.2 has some information, but is outdated of course:

Sadly I can't find any documentation for the currently supported versions of Plesk (9-11). In fact, mailmng is not mentioned at all in the Plesk 11 Command Line Reference: http://download1.parallels.com/Plesk/PP11/11.0/Doc/en-US/online/plesk-unix-cli/ But the mailmng command is still available...
 
Output of # /usr/local/psa/admin/bin/mailmng --help-commands is not enough for you?
 
No, it isn't.

/usr/local/psa/admin/bin/mailmng --add-handler --help does explain the different options and possible values involved, but it's not clear to me what they do, what the expected output of a mail handler executable is, etc.

Why was there documentation on custom mail handlers for Plesk 8, but was it removed for supported recent versions of Plesk?
 
Because we do not recommend to use utilities from /usr/local/psa/admin/(s)bin/ It is internal Plesk utilites. Utilities for customers can be used from /usr/local/psa/(s)bin/ and they are documented well.
 
Let's say I'm a developer wanting to add a custom mail handler, where would I go for documentation then?
