New to Plesk & in need of consulting

I work for a small marketing/web design firm and we are just getting into OSCommerce sites. We have one up and running and another that's ready to be built.

Our sites are being hosted on 1and1.com using Plesk 8.0.1 on FedoraCore4...which I've just read is about to hit EOL status.

Additionally, we have a virutal private server with 1and1 and were told that we can't have more than one IP address on it....so we're going to have to either do a dedicated server or another virtual private server for this new site.

Taking all things into consideration - what would be best:

to move both sites to a dedicated server?
leave site 1 as it is and build site 2 on a different virtual private server?

Are any of you aware of someone that is available for consultation on this subject - we really are in over our heads with this server set up and not getting the answers we need from anyone...and having difficulty finding consultants in this area that do server admin for this type thing.

It may be easier just to get managed VPS or shared hosting - that way you do not have to be responsible for managing and maintaining the server itself.

Also just FYI - most of the peeps here dont look in this forum anymore since 8.0 is antiquated and no longer used by the vast majority.
