Really does depend on your server, and not exactly plesk.
server files have to be linux
and a super user account is usually useful.
although apparently using Root is a security risk.
Each game has its own instalation style. its a matter of reading the setup file

i'm running some gameservers... but nothing related to plesk..
just adduser... and get them running there
