i'm given the task to set.up our new VPS for our domain and i need ideas on plesk...

is it ok to have a default hostname?
how to change a hostname?
how to tesk the web pages locally?

What do you mean by a 'default hostname'?

You can change the server's hostname under Server -> Server Preferences.

You can get a Site Preview for a domain if DNS is not yet pointing to your server. At least, I think that's what you mean when you're talking about testing webpages locally.
