Can anyone help with adding spare device to Plesk active and running installation with mdadm on Ubuntu?

When you deploy bare metal server on Vultr with Plesk, you will get Plesk installed on one disk only. The machine has two 250GB drives, one of them remains empty and spare. I would like to add it to software raid.

My question is, is this going to disrupt Plesk installation somehow? Does anyone have working experience with this kind of setup? Any comments, ideas or instructions are welcome.

Yes, you'd be able to mount the additional drive and add the drive to RAID.

However, you should consult a professional to assist you and ensure you take a full back up.
