What is the proper method of upgrading from 8.0 to 8.2.1 on a linux box? Can I go directly from 8.0 to 8.2.1 or is it best to upgrade each minor release from 8.0 to 8.2.1? thanks in advance

Just recently I went from 8.0.1. straight to 8.2.1 without problems on my CentOS4 box.
 
You should be fine upgrading from 8.0 to 8.2.1...

Make sure to backup your data though, should you run into any problems.
