Upgrading from 9.2.1 to 9.5.4

Hi,
We would like to upgrade our panel on 2 servers from 9.2.1 to 9.5.4
I already know we need to get a nice license created, but other than that..

What takes place during the upgrade process? Has anyone done this? What would be the step by step process and how long would my hosting sites be down during this update?

Can I just back up Plesk and run the installer and it will just just fly?

Sorry - it's a big undertaking, and don't want to shoot at the dark.. just looking for some input on what I should watch out for, or be prepared for...
