Despite being selected on the Web Server (Apache) is not displayed on the Resources Usage graph.

Do you mean 'Resources Usage Statistics' graph? I can't reproduce it on my test environment and on demoset here http://www.parallels.com/products/plesk/demo/

Ah… It is there but my loads are so low. I can see them when I turn other items off.
