Resolved With Update 55 and PHP Update

Try to click Refresh button in Server Components and check version there.
 
After click on refresh button nothing changed
php73 => 7.3.5-1centos.7.190506.1021

I see again a button on start page with
Updates for 56 system packages are available (checked on June 10, 2019 03:12 AM)
Its included php 7.3.6, still waiting to install/update
 
Strange, I see on my CentOS7 Plesk 17.8:

php73 => 7.3.6-1centos.7.190531.0953

Try to run

# plesk installer --select-release-current --reinstall-patch --upgrade-installed-components
 
After your command I see on start page with newest update #56
Plesk Onyx Version 17.8.11 Update #56, last updated on June 10, 2019 11:55 AM
Now I see 7.3.6 in plesk "7.3.6-1centos.7.190531.0953" too.

Thanks, but little strange that php was not updated here for #55. ;-)
