I want to install ffmpeg-php, and it looks like i need to run the command "phpize" before running "make" command. phpize comes with php-devel, so will it break plesk if i install php-devel?

No, but you might encounter slight issues when attempting to change PHP version via Autoinstaller (if you're on CentOS/RedHat 5).
